The remnants of Hurricane Ike came through the St Louis area in the form of LOTS of rain last night and this morning. What better way to kick-off a rainy Sunday than pancakes?!
When we were in San Francisco, my friend Beth took us to this really cute cafe for a post-hiking breakfast: The Dipsea Cafe. I ordered their special that day, Buckwheat Banana Walnut pancakes. They were de-licious and the Mr. and I have been thinking about them ever since. I decided to create something similar this morning.
I used this recipe, which I suspect is from Veganomicon, since it was submitted by Isa. I substituted whole wheat pastry flour for the white flour and used two large bananas. My bananas were perfectly ripe and not over-ripe, so I put them in the food processor to mash/puree them nicely.
The finished product:
They were REALLY good! I topped mine with Earth Balance, and some defrosted frozen berries. I dipped in pure maple syrup so that I could get more of the maple-y flavor. The recipe made about 12 small-ish pancakes, so I froze the rest for another rainy day
