One Down, Many More to Go! September 15, 2008

Today we celebrated our one year anniversary!  On Sept. 15, 2007, we were married at St. Frances Cabrini Church in Omaha, Nebraska (my parents’ church in my hometown).

Our recent trip to San Francisco was our “big” anniversary celebration, so we decided we would celebrate our first anniversary at home.  Cooking together has always been an important and fun part of our relationship.  While we were dating, we cooked dinner together at Zach’s house almost as much as we went out to dinner.  It was a fun way to get to know each other better- a lot better than sitting at a restaurant waiting for someone else to prepare a meal (although, obviously, that has it’s time and place!).

We got out our wedding china for dinner tonight.

So pretty…someday we’ll have a china hutch to display it all and a family to serve it to!  On the menu for tonight’s feast:

Greens with craisins, red onions and walnuts with Sweet Italian Dressing

Luckily, I wrapped our cake in a tin foil time capsule, so it was still moist and delicious one year later!  I LOVE cake, so it doesn’t really take too much to impress me, but Zach is pickier and he said this was good “but it lost its fluffiness.”  Regardless, I put it back in the fridge and will probably enjoy some more this week 🙂

If you ever need to keep a cake for a year (and probably more!), here’s how to make a tin foil time capsule:

saran wrap (maybe 2 layers?)

tight layer of foil

cake box, taped shut

saran wrap

tight layer of foil

paper grocery bag, taped shut

label the bag

    Oooo how about a fellow Bridget in “healthy-blogland”…thats also a dancer!! I read down a few to your Zumba post and I too spent most of my life dancing and doing dances teams in HS, college, and after! So funny!!
